Mirgundi
Mirgundi is a beloved Maharashtrian traditional fryum, known for its long, thin strips and irresistibly crisp texture. Made primarily from urad dal (black gram) flour, it is delicately seasoned with black pepper and salt, and kneaded using a herbal-infused liquid that gives Mirgundi its distinctive flavour.
Each batch is handmade by women from the villages of Murbad Taluka, Thane district, Maharashtra, using a time-honoured, unique family recipe. Rolled carefully by hand using traditional pans and pins, the process preserves authenticity and ensures the perfect crunch in every bite.
Mirgundi is traditionally served as a side accompaniment with everyday meals, adding texture and flavour to simple food. It can also be enjoyed as an appetizer or light snack.
